Fasting, especially in the month of
Ramadan, is a religious activity in the form of refraining, from not eating,
not drinking, and from other things that have been canceled since Fajr (dawn)
until Maghrib. Of course as long as that body is still used for activities,
there is something as usual and some are reduced. In addition to holding back
from things that cancel fasting, a Muslim must also try to resist various evils
that can reduce the reward of fasting. Maybe if something bad happens, anger
will arise, especially when it's hot during the day, so when fasting try to
stay calm and relaxed. After the activity and experience of heat during the
day, of course the body will be tired, especially before maghrib. Then the body
needs to get a refreshing and sweet iftar meal. One of the right drinks for
breaking the fast is dawet.
Dawet is a refreshing drink typical
of the archipelago (Indonesia) originating from the island of Java, both
Javanese and Sundanese, which has a basic ingredient in the form of a
collection of cendol which is jelly-like with a soft texture and usually shaped
like chili and made from hunkwe flour (can be from sago ), then given gravy
from brown sugar/ coconut palm sugar (java sugar) liquid and coconut milk.
Cendol is usually green and can use natural dyes from pandanus leaves or suji
(D. angustifolia) leaves. This drink has a sweet and soft taste in the mouth.
Usually these drinks are served in large glasses and some are served in a bowl.
Dawet can also be served cold either from the refrigerator or using shaved ice
or ice cubes, so it tastes more delicious.
Besides cendol, filling ingredients
for dawet drinks can use grass jelly, basil seeds and seaweed. Cincau is
similar to jelly, black or green and tends to be transparent, and is made from
soaking certain parts of certain plants (especially the leaves). Generally
cincau in Java, one of them is Wonogiri regency in the east using janggelan
leaves (from the genus Mesona). Cincau is generally cut about the size of a
small dice for dawet drinks. Although cendol and cincau tend to be tasteless,
when mixed with brown / coconut palm sugar and coconut milk, it will taste just
right. When consumed, the sweetness of the sauce can provide freshness and soft
filling makes it delicious to chew, so it feels fun. Seaweed that can be used
for dawet especially white ones. White seaweed must be boiled first for dawet
drinks. When chewed, white seaweed feels a little crunchy but wet. I once made
dawet with basil seeds, which are basil plant seeds that resemble frog eggs.
Usually basil seeds are used for fresh drinks. Basil seeds can be added to
dawet drinks, but the taste will be inferior to other ingredients.
Dawet broth is made from boiled
brown sugar (coconut palm sugar / java sugar) which is given a leaf sheet of
lime and a little salt. Coconut palm sugar has a distinctive sweet taste and is
generally brownish red in color. When boiled in water until boiling, the pieces
of brown sugar will melt. In order to add a fragrant aroma, used sheets of lime
leaves. Salt is used so that the flavor is not too sweet. Coconut milk can be
added to the dawet beverage separately with brown sugar sauce. But both of them
will unite and become a very delicious sauce.
I feel grateful to be able to break
the fast in Ramadan with dawet made by my own family. Therefore, I have the
concept of breaking fast in the form of dawet if the design of the Shahada
Mosque (Masjid Syahadat) from the Betterpad-Ray (Benteng Terpadu Raya / Great
Integrated Fortress) model can be realized, God willing, it will be an iftar
meal at the mosque. How to make dawet is very easy. For one glass or bowl, just
put the dawet filling into it, then add brown / coconut palm sugar and coconut
milk, then stir until evenly distributed and can be added ice cubes or shaved
ice to cool. Dawet drinks will be distributed to visitors to the Shahada mosque
in Betterpad-Ray when they are approaching Maghrib or breaking the fast. God willing,
visitors to the Shahada mosque in Betterpad-Ray will be able to be grateful
while enjoying dawet as an Indonesian beverage. The sweet taste of dawet sauce
and the carbohydrate content can make the body's energy recover and eager to
carry out the next service.
